Grandpa's Christmas Salmon




Growing up, Christmas dinner at my grandparents' house was always a special occasion. My grandfather, who was a fisherman, would always make his signature dish: grilled salmon with a honey mustard glaze. As a child, I remember watching in amazement as he expertly prepared the salmon on the grill, basting it with the sweet and tangy glaze.


But what I didn't realize at the time was the true effort and dedication that went into each and every salmon that my grandfather served. You see, my grandfather was a fisherman in Alaska, where the icy waters were teeming with some of the freshest and most delicious salmon in the world. Every summer, he would pack up his gear and head to Alaska to spend several months fishing on the rugged, wild coast.


It was a tough and dangerous job, but my grandfather loved every minute of it. He took pride in the fact that he was able to provide his family with the freshest, most flavorful salmon that money could buy. And on Christmas Day, when we all gathered around the table to enjoy his famous honey mustard grilled salmon, we knew that it was the result of his hard work and passion.


Now, every Christmas, I like to honor my grandfather's memory by recreating his honey mustard grilled salmon recipe. It's a simple yet delicious dish that is perfect for the holiday season. And every time I take a bite, I am reminded of the love and dedication that went into each and every one of my grandfather's catches.


Ingredients:

  • 4 salmon fillets

  • Salt and pepper, to taste

  • 2 tablespoons Dijon mustard

  • 2 tablespoons honey

  • 1 garlic clove, minced

  • 1 tablespoon olive oil

  • 2 tablespoons chopped fresh herbs (such as parsley, dill, or basil)

  • 1/4 cup dry white wine

  • 1 tablespoon unsalted butter

  • 1 lemon, thinly sliced

Instructions:

  1. Preheat your grill to medium-high heat.

  2. Season the salmon fillets with salt and pepper on both sides.

  3. In a small bowl, whisk together the Dijon mustard, honey, garlic, olive oil, and herbs.

  4. Place the salmon fillets on the grill and brush the honey mustard glaze over the top.

  5. Grill the salmon for 6-8 minutes on each side, or until it is cooked through and flakes easily with a fork.

  6. While the salmon is grilling, prepare the sauce. In a small saucepan, heat the white wine over medium heat until it reduces by half. Add in the butter and lemon slices, and cook until the butter is melted and the sauce is slightly thickened.

  7. When the salmon is finished grilling, transfer it to a serving platter and spoon the white wine and lemon sauce over the top.

  8. Serve the grilled salmon with your choice of sides and enjoy!
